Gratitude Jar

I was cleaning out a closet in my back room and I came across something that I had purchased a while back and stored away. It was a beautiful antique jar. As I was sitting there admiring it’s design, I began to wonder what I would do with this lovely piece of art. Even though I knew it had at one time sat in someones kitchen filled with cookies, that is not what I envisioned for it. And then it dawned…a Gratitude Jar, of course!! I took a package of colorful index cards, cut them up and began to write all of what and whom I am grateful for in my life. Then I placed them in the gratitude jar and closed the lid. Now at any given time, I can reach in there, pick a gratitude card out and it will remind me to be more thankful for what ever is written on the little card. Also , at random, I add even more cards to the jar… always thinking of things I can be thankful for.






I especially appreciate having this little gem for many reasons. Other than the obvious, there are times when I may feel overwhelmed, scared or angry. It is in those times when the treasures of what this jar holds becomes invaluable to me. I personally feel that nothing will  pull me out of being in the space of the darker energies in life faster than gratitude. Well, there is always raw vegan macaroni and cheese, tee hee.  Seriously, all joking aside, being thankful makes me instantly begin to feel more trustful of the present moment. Which turns my attitude regarding the future just a bit more bright.

Practicing gratitude is like anything else in life. I recall the day I decided I wanted to become a really great artist. I could only draw stick people at the time. Yet I began to practice everyday. And before I knew it, I could actually draw and paint something I became proud of. And as time goes on, my creations become more seemingly effortless. Gratitude works this way as well. Keep practicing and one day you will wake up and know that it is your natural state of being. And when that magical moment happens, you will master one of the great secrets of the universe.

Do you have something like this sitting around your house collecting dust? If you do, I encourage you to turn it into a gratitude jar. It’s fun, and so empowering to have something that is ever there to remind us of how to be grateful for what we have and need in order to truly manifest more of the whispers of our hearts.

Ooh La Cha Cha Raw Vegan Taco Supreme

 Let’s dance!  Let’s sing!! Let, ooh la cha cha, raw vegan taco’s supreme ring!!!  This taco recipe is so alive, and so filled with nutrients that they release endorphins with simply a mere taste!!! Jared and I sat giggling while we ate this scrumptiousness. Every bite filled us with more and more joy. Here is the recipe, and always remember…

 Taco Shells      

In a food processor put :

4 cups of organic corn, one & 1/2 red bell pepper, 1/4 cup of sun dried tomato, 1 & 1/2 tbsp of cumin, 1tbsp of chili powder, one cup ground  golden flaxseed, the juice from one large lime, and a pinch of sea salt. Mix it up until it is smooth. Put spoonfuls of the mixture on a teflex tray of the dehydrator. Smash and create round circled taco shapes.  You can use a large glass or small plate if you want to make your circles perfect. Just trace around the edges . Dehydrate for 4 hours @ 118 f. Take them off the sheet, flip them, then put them back on the tray without the teflex. Dehydrate for 1 to 2 more hours. They will be pliable.

Avocado Tomango Delight ( filling)

In a bowl place, 2 ripe avocado, cut up in little squares, 10 cherry  tomato cut in half, one mango cut up into small squares. Then add 1 tbsp of lime and sea salt and pepper to taste.


Cucumber Cilantro Tzatziki Sauce

2 cups  of coconut yogurt. Place in a bowl. In the food processor put 2 pealed and seeded cucumbers. 2 cups of fresh cilantro, 2 gloves of garlic, 4 scallions, and a pinch of sea salt to taste. After it is all mixed in the food processor, add it to the coconut yogurt.

Lay a taco shell on a plate. Fill it will the avocado tomango delight. Then top it off with the cucumber cilantro tzatziki sauce. Prepare to giggle! 🙂

Raw Veggie & Hummus Kale Wraps with Blackberry Salsa

Are you ready to experience a feast of your senses in delectable proportions? I made these tasty veggie wraps the other day and seriously, we could not get them down into our digestion system fast enough, ha! They are super easy to make. And even easier to digest. Every ingredient is raw with the exception of the hummus.  So, are you ready? Scroll down for the recipe and photos that speak for themselves. And don’t be surprised  if you get the urge to jump up and dance after you take a bite. A little tip: I always make my recipes with my favorite music playing. It makes the food taste better. 🙂

1 Bunch of Kale

Lemon Garlic Hummus

 2 Tomato’s

2 Avocado’s

2 Mango’s

1 Cucumber

2 Cups of Blackberries

2 Cups of Micro Greens

You can see by the photos below that you just layer each ingredient on the kale leaf, roll it up and feast till your hearts content!!

To make the Blackerry Salsa : Put the following ingredients  in a food processor  : 2 cups of Blackerries, one small onion, 1 glove of garlic, 1/2 jalapeño, a pinch of salt, a hand full of chopped cilantro, 1/2 of lime juice, and a tablespoon of raw honey. Pump and pulse until blended well, yet  still somewhat chunky.

You can choose to buy a nice hummus at your favorite health food store /or you can make it homemade here :

one 16 0z can of organic chick peas, two tablespoons of tahini. Two cloves of garlic, the juice from two lemons, 1/2 teaspoon of tamari, 1/4 cup of water and two tablespoons of olive oil. Put all these ingredients in a food processor and blend till smooth.

It’s anywhere & everywhere…what is it?

It can seem elusive… “no-where” at times, but that is just an illusion. At it’s best, it is pouring abundantly. Showing up at any given moment. Showing up at every given moment. Yes, It is everywhere and anywhere. What is it? It is Love. I have many photos to prove it and I am sharing them with you in today’s blog. I chose this day to share this with you because it is my dearest Aunty Sandy’s birthday. She gets the biggest kick from knowing that love shows up where ever I am. Sometimes love shows up intentionally for me, like when I am creating a heart shaped recipe or a work of art. However, for the most part, love just shows up, randomly , anywhere and everywhere. And it can be that way for you as well. It is not really magic. But the trick is too be in  tune with that vibration of your heart. Remember that when we perceive life through love, miracles happen effortlessly. Happy Birthday Aunty. Wait- for- it… ah ha! There it is! xoxo
